Corn Bread
Ingredients:
1 egg or 2 egg whites
1 cup flour or (1/2 flour & 1/2 wheat flour)
(I have substituted Cream of wheat and wheat 1 Tablespoon melted butter germ for one of
the flours)
1 cup milk (I've used OJ also)
3 teaspoons baking powder
1/2 cup Hagen handfeeding formula
1/4 cup sugar
1/2 teaspoon salt
2/3 cup corn meal
Directions:
Crush egg shells to a very fine powder then combine with all ingredients as listed.
Beat well, and pour into greased and floured 2 qt cake pan. I use a corning ware 10"
fry pan. Bake at 350 for 45-55 minutes. Adjustments need to be made for high altitude.
