Rice & Veggies
Ingredients:
- 1 cup brown rice
- 1/4 cup lentils
- 1/4 cup split peas
- 1/4 cup barley
- 1/4 cup couscous
- 1/4 cup frozen corn
- 1/4 cup frozen peas
- Season with hot pepper flakes.
Directions:
Add first four ingredients to 1 3/4 cups of water. Microwave on
high for 30 mins. Add remaining ingredients. For variations: add brocolli, carrots, cooked
beans, any kind, or any veggie you have on hand. This mix can be frozen and taken
out ahead of time to thaw. |
